Bikini Recipe

Yields 10 guests

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Instructions

Making the Cordial: Place all the components in a pan, bring to a gentle boil, stirring to dissolve. After that, take off the stove allowing it to reach room temperature entirely. Transfer into a clean bottle, seal and store chilled, where it will keep for up to a month.

Preparing the Premix: Combine the specified spirits and syrup into a sizeable container, let it rest for one hour, then filter it preferably using muslin, making it fully clarified.

For serving: Measure 85ml of your batch mix to a mixing glass filled with ice, gently stirring carefully for a minute to chill. Pour into an chilled martini glass or similar, decorate with the cranberries and complete it with a light spray of the essential oil over the drink.
